There are many versions of this bright Mexican classic or sopa de tortilla with tomatoes and without, with chile de arbol, pasilla, jalapeños, habaneros or chipotle in some cases two varieties of chillies. But whichever one it is. It is always delicious. A complete meal with beans, protein, carbs it’s a one pot hot pot no one can resist. As we live in India some adaptation is necessary. I used pickled jalapeños as a garnish and it was yum. I added chipotle in adobo sauce f
