It’s a really simple and delicious recipe that can be adapted as your little one gets older, perfect for weaning and adults! You can introduce spices to these and more flavour as they grow! You can batch cook these and freeze them. CARROT & COURGETTE FRITTERS! Ingredients * 1 medium carrots, peeled and grated * 1 medium courgette, grated and squeezed * 2 small eggs * Oil for frying Method 1. Add carrot, courgette and eggs to a bowl and mix (You can season with salt and pepper for older kids and adults). 2. Heat frying oil in a skillet over medium-low heat. Avoid boiling or overcooking "Zoodles" (aka vegetable/zucchini noodles). I've overcooked some myself: they turned mushy in about 15 seconds 😹 I like to extract water quickly over HOT, high heat to get pure flavor with some vaguely "al dente" texture. Ok it's not a giant bowl of linguine with butter but it's pretty tasty! | Alex Guarnaschelli
