It’s been another fine spring obsessing over creeping bellflower (Campanula rapunculoides), which has several edible parts. I like the new leaves and chopped shoots best cooked, whether curried with coconut flakes or in saag as my friend Eric prepares them. The roots are nice boiled, fried, or baked. The flowers and buds are edible too. This is a common landscaping plant found as a garden escape, so look for it around old homesteads and plantings. In the mountains we have two highly toxic genera
