THANK YOU to one of our followers for asking for a blackened fish recipe. We found some beautiful Atlantic Cod filet and we had leftover Tzatziki from Easter dinner. It seemed like the perfect match! You can buy cajun seasoning if you don’t want to make it from scratch. You can use whatever fish or protein you prefer. We coated the cod and cooked it on medium-high heat in a cast-iron skillet to 145 degrees. Caramelized the onions in the same pan, toasted a brioche bun and stacked up our sandwich
