Have you tried this? 🍋 Roasted lemon slices with roast vegetables and a protein and fibre-rich bean puree! 1 Carrot 1 Potato ½ Butternut squash 2 tbsp oregano 1 lemon cut into slices 1 tbsp lemon pepper salt 1 tsp lemon zest 1 / 4 tsp sumac Salt & pepper to taste 2 tbsp olive oil Coat vegetables with oil and seasoning and place lemon slices around the pan. Pop into a preheated oven (180 degrees) for 30min, depending on size and volume of vegetables. Check for preferred tenderness at 20 - 30min
