Gumbo is a history lesson in a bowl. Gumbo is a soup consisting of a stock, meat or shellfish, okra or filé powder, and the Creole holy trinity - celery, bell peppers, and onion. The typical starting point for gumbo is to slowly build a dark French roux, using oil and flour. Then, the holy trinity is added to the pot, filling the chef's kitchen with the most iconic and wonderful smell in all of cooking.
