PUMPKIN GNOCCHI 🎃 Who said Pumpkins were just for halloween? Arguably one of our favourite winter squash's pumpkins are super tasty and go perfect with just about any form of carb. We've gone for crispy gnocchi with a butter sage sauce. Simple and delicious - full recipe below. For the sauce 3 tbsp olive oil 1 tbsp plant based butter Small pumpkin (around 700g-800g) 1 bunch sage 2 cloves garlic, minced 1-2 tsp chilli flakes 250ml plant-based cream Pinch saffron Very generous grating of fresh nu
