Here’s the best way to cook skin-on salmon for crispy skin: Brush oil all over a 2.5 pound piece of salmon. Sprinkle flesh side with salt and any seasonings you like. On the skin side, skip the other seasonings and just use salt. Broil skin-side-up 6-8 inches from heat until skin is crispy and starting to brown in places, 5-7 minutes.
