Day 55 of 100: Buckwheat Wraps. These are somewhere between a tortilla and a pancake but are so delicious! Like a French galette but thicker, and reminds me a bit of Ethiopian injera too. They’re great stuffed with your favorite salad, topped with tofu scramble and some hot sauce for a savory high protein breakfast, or try them with nut butter and sliced banana for a snack.
