Reasons I shred my own cheese: 1. Pre-shredded cheese is coated with anti-caking agents such as potato starch and powdered cellulose. Cellulose is often made from wood pulp. 🫣 This keeps the strands from clumping together in the bag. When you shred it yourself you don’t have the coatings and fillers. 2. It tastes better!! Once you taste fresh shredded cheese, you’ll never want bagged stuff again because it just tastes so much better. Because it isn’t coated in the anti-caking cellulose it melts

the BEST grilled cheese has some guidelines (IMHO): 1. grating cheese (vs buying it pre-grated) is KEY. a lot of times, shredded cheese is coated in starches to avoid clumping which doesn’t give perfect cheese pulls. 2. i like to use 2-3 different types of cheeses. here i went with medium cheddar and monterey jack. i don’t do American cheese, sorry. 3. i love brioche bread because it’s rich and delicious. but sour dough is banging too. 4. softened butter on the outside of each slice of bread. i
