For the British version, the negative uh-uh has the same emphasis as the word "dingo" (odd example but stick with me), whereas the affirmative uh-huh has the same emphasis as "ahoy". The Italian affirmative has the same emphasis as "dingo", when we're expecting "ahoy".

That first “uh” is said very quickly and harshly, just a sharp vowel sound. The emphasis is entirely on the “yuh” part. There’s a certain lilting music and variation to how you say it that can vaguely modify the meaning from a straight affirmative to a more vague “probably”, as well.

I'd say "uh huh" normally but never "uh uh". The only context I can imagine an adult saying "uh uh" (or maybe "uh uh uh") is in a "no you can't do that" sense to either a child or jokingly to an adult.
