2018年8月8日 · The steel has a hardness of 60 HRC. The Kaizen II is made from FC61 steel that is wrapped in 49 layers of steel in a damasucs pattern. This steel is slightly harder at 61 HRC. The other major difference is the handle material. The Kaizen has a linen micarta handle, while the Kaizen II has a pakkawood handle (a wood/plastic composite).

2020年12月7日 · The balance point is exactly where the handle meets the steel, which makes it handle-heavy when held with a pinch grip. The fit and finish are impeccable, although it is a factory-produced Miyabi so I wouldn't expect anything different. The handle is thicker than some knives which I personally enjoy.

The curvature does not let you rock it back like a Santoku, so it took a bit of time for me to get used to. The pairing knife costs just as much as the chefs knife. As far as I can tell, the most common complains that people have about Miyabi are 1- They are factory made. This one feels mostly as a personal thing and when complained about it's more in combination with the next two. So if you are fine with this, which I would, forget about this one.
