I dont think you're going to find many characters that are portrayed in a positive light that are chubby/fat in anime. Japan doesn't buy into body positivity. They know what they like and that is the historically feminine ideal body type. It just is what is. Plus, I highly doubt an anime with a chubby waifu would do well.
