If you want lore accurate you must have ranger in there. Minsc is and always was a ranger, even before appearing in BG1. Minsc also specifically have many lines around using big swords and wearing full plate. It's also very hard to go wrong with a martial melee class. The dex stat is irrelevant. 15 dex is too shitty to leave at 15 for your tank character. Minsc needs the gauntlets too. So cross off the dex stat. It's going to be 18 for both. BG2 Minsc had a unique ability called "Berserk" that he couldn't use very often and that would get triggered automatically if his "witch" died. No other aspect of Minsc had anything in common with the Barbarian class.
