It is I-765 EAD not I-766 and yes, since you are legally authorized to seek employment you may consider continuing your education as you desire. In terms of the admission policies, each education institution has an Admission or Student's Affairs office which will assist you in gathering required documents for admission.

I-766 is an actual Employment Authorization Card. L-1 visa holders can file for a green card and you might be eligible for the permanent resident status as a derivative. However, as a spouse of L-1 visa holder, you may file for the employment authorization independently.
