Guacamole is delicious as a topping for burgers or jacket potatoes and is usually served as an accompaniment to fajitas, along with soured cream. Make it chunky or smooth, according to taste.
Not only do pickled jalapeños add spice (but in a mellow way), they are brined in vinegar and salt, highlighting the other flavors in the guacamole. I also add a splash of the jalapeño pickle brine.
