Pour Campari, whiskey, lemon juice and simple syrup directly into the ice glass. If using a cocktail shaker, shake vigorously until well-chilled and strain into a cocktail glass.

Mix the grapefruit juice, simple syrup, and Campari in a tall glass. Add seltzer to taste. Top with ice cream. Garnish with mint leaves.
