Raise the heat to medium and add the steamed kale and scallions. Cook for 2 minutes and then add the rice and cook for another 2 minutes, stirring. Add the soy sauce and cook for 30 seconds more.
Add the kale along with a small pinch of sea salt and cook for a further 5 minutes. Divide the purée between two plates and arrange the mushroom and kale mixture on top. Garnish with a wedge of lime.
